I made this cake for Mr Rush Hour’s birthday at the beginning of April. The combination of ginger, chocolate and cardamom is totally delicious and the addition of beetroot gives the cake an almost fudge like texture. It’s the most unusual cake I’ve ever made. I really can’t stop thinking about it and intend to make another one very soon.
The only downside was that Eve and Leah, after the first tentative nibble dismissed it with a unanimous “not eat’n it”, even though I’d decorated it with some very un-grownup hundred and thousand chocolate buttons brought from our lovely local sweetshop.
The cake recipe is from Abel & Cole. It’s the recipe for chocolate and ginger beetroot cake, although the recipe here omits the cardamon. The version I made had half a teaspoon of crushed cardamom pods in it. I also increased the ingredients by a third as I wanted a bigger cake.
